FROM GRAPE TO WINE · RIPENESS
Under the Mediterranean climate and the sea spray from the lagoon, the grapes ripen slowly. Picking at just the right moment: the whole art of Domaine Pilenium.
THE RIGHT MOMENT
At Peyriac-de-Mer, the vines enjoy a Mediterranean climate tempered by the nearby sea and lagoons. Nights stay cool, days are bright: this contrast prolongs ripening and preserves the berries’ natural acidity.
At Pilenium, ripeness is not only a matter of sugar. Plot by plot, we follow the balance between aromatic concentration, freshness and tannin ripeness. Each grape variety — Vermentino, Bourboulenc, Grenache, Syrah, Mourvèdre, Cinsault — has its own tempo.
Tasting the berries, observing the pips, feeling the skins: the decision to harvest is taken as close to the living vine as possible, to seize the moment when the fruit expresses its full potential without losing any of its saline tension.

SIGNATURE OF THE PLACE
Because the vines are bathed in the briny air of the Bages-Sigean lagoons, our grapes keep a remarkable tension, even at the height of the Languedoc summer. This is the celebrated saline freshness that runs through every Pilenium cuvée.
Harvesting at the right moment keeps that balance intact: luminous whites, generous rosés, reds that are deep but never heavy.
