Cultivated in the Mediterranean climate of Languedoc, the grenache of the unexpected captures the essence of the terroir with a distinctive salty touch. Vinification in tank, according to organic certified methods, preserves the purity and authenticity of aromas, guaranteeing exceptional quality.

The delicate seduced by its fresh and delicate aromatic profile, mixing citrus and fishing for a symphony of flavors. Its pale yellow color invites to tasting, offering a remarkable length and finesse.

With a production limited to 10,000 bottles, the delicate embodies our commitment to quality. Available online, this white Languedoc wine is a treasure accessible to all amateurs.
Terroir and vinification
The Languedoc clay-limestone terroir, combined with the Mediterranean climate, gives the delicate its unique character. Organic winemaking, integrating modern and traditional techniques, allows the Rolle and Bourboulenc to fully develop their aromas while preserving the delicate structure of wine.

The terroir of Corbières, with its various soils and its ideal climate, gives cosmopolitis its minerality and freshness. The organic cultivation method and vinification in tank preserve the natural qualities of grape varieties, offering an authentic and respectful wine of nature.
Domaine Pilenium: a journey through the flavors of Aude wine
Nestled in the heart of Aude, our wine estate is a real gem, rich in a history that is closely intertwined with that of the region. Founded on an ancient Roman site, where ancient jars were unearthed, testifying to the region's long wine-growing tradition, the estate was acquired in September 2022.
Domaine Pilenium, guardian of a wine heritage
Moreover, long before the Romans, these places were the commercial crossroads of wine for the peoples of the Mediterranean, with the indigenous people called the Elisyques. This rich commercial and cultural history underlines the millennial importance of our terroir in the history of wine, making Domaine Pilenium the guardian of a wine heritage that spans the ages.
Identity: The Dancer of Domaine Pilenium: Symbol of Heritage and Wine Renaissance
The dancer present on the Domaine Pilenium logo comes from an old pottery found on the site. This renaissance is marked by a desire to perpetuate and reinvent the wine heritage, in harmony with nature and traditions. She probably dances the end of the grape harvest, symbolizing the celebration of a season of hard work and the beginning of a new cycle.
The story of this dancer begins centuries ago, when a talented potter immortalized her graceful movements on a piece of pottery. Discovered years later on the estate, this pottery became a source of inspiration for Domaine Pilenium. The dancer, now emblem of the estate, embodies the spirit of the vine and the passion of wine artisans.
Every year, as the harvest draws to a close, locals and estate workers gather for a traditional festival. The dancer, the central figure of this celebration, reminds everyone of the beauty of wine heritage and the importance of preserving these traditions while embracing innovation. Its dance, evoking ancient gestures and the rhythms of nature, unites the community in a moment of joy and recognition, marking the passing of the seasons and the hope of a promising new harvest.

A unique terroir
The Pilenium estate extends over 20 hectares of vines, bathed in a Mediterranean climate and anchored in clay-limestone and alluvial soil. This composition, combined with a southern exposure, creates an ideal climate for the vines. The estate is located in a protected area, on a peninsula of 800 hectares, the pla de l'Ille, where Pilenium is the only operator. This exceptional setting, combined with the influence of sea spray, gives our wines a distinctive saline character, particularly perceptible in our white wines and our rosé.

The Cosmopolite and the Magnifique, our red wines, are the result of thoughtful blends, highlighting Syrah, Grenache and Mourvèdre. Le Magnifique, partially aged in French oak barrels, is an ode to the complexity and richness of our terroir.
Unexpected
L'Inatendu, our rosé wine, is a celebration of spontaneity and authenticity, made from an old Grenache which reveals all the splendor of our terroir.
Each bottle, weighing just 530g to minimize environmental impact, is a symbol of our commitment to sustainability.

Le Délicat, our white wine, is a marvel of finesse and balance, the result of meticulous work and partial vinification in French oak barrels.
