FROM GRAPE TO WINE · AGEING

Ageing

Stainless steel tanks for purity, French oak barrels for depth: in the cellar, each cuvée takes the time to reveal itself.

THE PATIENCE OF THE CELLAR

Reveal without masking.

After the harvest, the wine enters the cellar for the quietest — and most decisive — phase. At Domaine Pilenium, ageing follows one simple rule: accompany the wine without ever disguising it.

The whites and rosés are fermented and aged mostly in temperature-controlled stainless steel tanks, which preserve the fruit, the freshness and that saline signature. Certain red cuvées benefit from partial ageing in French oak barrels, which brings structure, silky tannins and notes of spice.

Wood is never an end in itself: it stays discreet, at the service of the wine. The aim remains constant — straight, elegant wines, true to their maritime Corbières terroir.

TWO PATHS, ONE BALANCE

Steel & oak.

The stainless steel tank

Temperature control: we keep the vivid fruit and mineral tension of the whites and rosés.

The oak barrel

On certain red cuvées, time in French oak refines the tannins and adds spice and depth.

A light touch

Measured ageing, with no excess of wood: the wine remains itself, rooted in its place.

COMMITMENT

A lighter bottle, a smaller footprint.

Respect for the living world does not stop at the vine. Our wines are bottled in lightweight glass (around 530 g) to reduce the carbon footprint of transport, without conceding anything on quality.

It is the same consistency from soil to glass: certified organic farming, a restrained cellar and responsible packaging choices.
