Tasting
Nose: Deep and captivating – wild blackberry, black fig, prune, black pepper, leather, garrigue, tobacco and black liquorice.
Palate: Dense, straight attack – powerful yet integrated tannins. The richness of Mourvèdre and the vibrant energy of Syrah, enhanced by new oak: macerated black cherry, sandalwood, grilled spices.
Finish: Long, firm, mineral, with remarkable tension and impressive persistence.
A monumental wine but never austere, which evolves magnificently with aeration.

A unique design by master glassmakers
Our wine glasses are the result of the expertise of master glassmakers, who have combined tradition and innovation to create exceptional pieces. Each glass, bearing our estate’s logo, is made from high‑quality crystal chosen for its clarity, durability and ability to reveal the wine’s most subtle nuances.
The range consists of two distinctive models: one dedicated to red wine, the other to white and rosé. This distinction optimises the tasting experience for each type of wine, taking into account their specific oenological characteristics. The design of each glass has been conceived to concentrate the aromas, offering an unrivalled olfactory and gustatory experience.
Our know-how
Our wines from the Aude region reflect a sun-drenched terroir, where the vines sink their roots into rich and varied soils, resulting in wines with complex, captivating aromas. As passionate advocates of sustainable growing methods, we produce organic wines that respect the delicate balance of our ecosystem, ensuring the purity and integrity of every bottle.
At Domaine Pilenium, we believe that wine tasting is an art that deserves the best. That is why we offer a range of original wine glasses, designed to enhance the aromas and flavors of our wines. Made from crystal by master glassmakers, our glasses have an atypical shape that enhances the tasting experience, whether for our organic red wine, our white wine or our Languedoc rosé wine. Each glass, adorned with our estate's logo, is an invitation to discover wine in a new light, by concentrating the aromas and avoiding warming the wine, for a tasting that engages all the senses.
Our commitment to the environment is at the heart of our philosophy. We practise sustainable viticulture, in harmony with nature, to preserve the biodiversity of our terroir. This eco-responsible approach results in authentic wines, rich in natural aromas.
With its Syrah-dominant blend, complemented by Grenache and Mourvèdre, Le Cosmopolite organic red wine is a true symphony of flavours, where notes of raspberry, blackcurrant and a very pleasant freshness mingle together. Carefully matured on our estate, Le Cosmopolite embodies our commitment to quality and our passion for creating wines that inspire and delight even the most discerning palates. Alongside it, Le Magnifique stands as the very essence of our pursuit of excellence. This denser, more structured organic red wine reflects a clear ambition: to create a premium cuvée that exceeds expectations. With a meticulous blend of Grenache, Syrah and Mourvèdre, Le Magnifique offers an unforgettable tasting experience, where spicy, chocolate and liquorice notes melt into an elegant tannic structure. It is a tribute to the power and elegance of Languedoc red wines, a cuvée that embodies the passion and expertise of our estate.
With its citrus and peach notes, this wine offers a refined taste experience, underlined by a slightly salty side that reflects the unique maritime influence of our terroir. As for our Languedoc rosé wine, L'Inattendu, it seduces with its freshness, offering a light and pleasant tasting, perfect to accompany moments of conviviality.
